Cowgirl Peeper

The Peep and Slick went together to the boot store to get a new pair for the Peep. She still has the fancy boots from last fall, but they are far beyond fitting though she still insists on wearing them around the house from time to time. The last time she got a couple of blisters and the next day she and Slick hit the local boot store together.



They found her a sassy pair of boots and she has taken them off only to sleep since, and even then, she sits them right next to the bed so she can put them on immediately when she wakes up with her gown! And for Zoo school since you have to wear kicks there- and so she has Shocks for those days...

Memaw's Chicken Spaghetti

I made this last week for a committee meeting of about 45 people and it was well recieved. Slick and Chief don't like it so we don't have it too often... and with all of that cheese... better not to have it all of the time!

Enjoy!

4 Chicken Breasts
1 onion
¾ c butter (I did not use any the last time I made this and it was plenty tasty)
1 ½ to 2 lbs Velveeta
1 can Rotel tomatoes with chilies
Large can mushroom slices drained
Large can English peas drained
2 TBSP Worcestershire sauce
1 pound of spaghetti


Boil chicken breasts with ½ of an onion, a couple stalks of celery and salt, pepper and garlic until done. Remove chicken. Discard vegetables. Reserve the broth for cooking the spaghetti.

Let chicken cool to touch and then remove from bone and chop into bite size pieces.

Chop other ½ onion and sauté in butter if desired.

Cook spaghetti in chicken broth with enough water added to make a big pot!

Reserve about 3 cups of broth after pasta cooks.

Chop Velveeta into smallish pieces, stir into hot drained spaghetti. Add Worcestershire, peas, mushrooms and un-drained Rotel tomatoes. Add chicken. If the spaghetti is too thick, add reserved broth ½ cup at a time to loosen it.

Bake entire concoction for 30 to 40 minutes at 350 in a greased casserole dish.

Tastes even better the second day…

MMMMM... FALL COOKING

This is a beloved recipe that we have been making since 1989 when a neighbor made it for us in a Christmas set of cookies and goodies. I LOVE LOVE LOVE it. We have slightly decreased the amounts of spices over the years and it is now perfect.

Pumpkin Bread

3 C sugar
1 C Crisco oil
4 eggs

Beat until creamy

Add:
2 tsp salt
½ tsp nutmeg
½ tsp cloves
¾ tsp cinnamon
2 tsp baking soda
1 15 oz can of pumpkin puree
2/3 C hot water
2 tsp lemon extract

Slowly add 3 1/3 C all purpose flour

Bake in 2 or 3 loaves for about an hour or in one large bundt about 65 minutes at 325 degrees.

Careful or you might eat the whole thing...

From Chief:

Now that he's 60 Chief has started giving advise. He has been giving advise for years, but we don't always listen. This is what he sent to me today. I thought it was worth sharing.


HOW TO INSTALL A HOME SECURITY SYSTEM IN THE SOUTH
1. Go to a second-hand store and buy a pair of men's, used, size 14-16 work boots.
2. Place them on your front porch, on top of a copy of Guns & Ammo Magazine.
3. Put a few giant dog dishes next to the boots and magazines.
4. Leave a note on your door that reads:

Bubba, Big Jim, Duke, Slim, & me went for more ammunition. Back in an hour. Don't mess with the pit bulls - they went after the mailman this morning and messed him up real bad. I don't think Killer took part in it but it was hard to tell from all the blood. Anyway, I locked all four of 'em in the house. Better wait outside.

The Dark Side of the Fridge


Several days ago Slick was getting healthy and decided to make tea.
In a Wal-Mart glass jug with a pink plastic spigot on the front.
And then he had to run out of town to Minnesota for a couple of days.
And the tea sat unnoticed by me in the fridge.
And drained from the jug. Into the fridge. Where it froze to the water reservoir in the back of the fridge behind the crisper that we did not know even existed but which might explain why our water dispenser had stopped working after internally freezing.
So Slick was playing golf all afternoon and I was defrosting his literally iced tea from the refrigerator. What do you get after melting iced tea? That's right. Cold liquid tea that runs into the cheese drawer requiring over an hour of dis-assembly of the three crispers and countless wiping out with a formerly blue now "tea stained" brown sponge.
And during all of this, the fridge kept beeping at me to let me know that the doors were open longer then the fridge thought necessary.
Man I hate tea.

Time capsule

This week we have had a lot of stuff!

It was the Peep's first day ever of dance at the studio recommended to us by the crazy neighbor.

Then we had Chief's 60th birthday.

Then we had Slick and my's 10th wedding anniversary.

Then the Peep was at a college concert with Pat Green.

Then we had over 40 people in the front yard for the 'wurst tailgate ever.

Then the Peep had a stunt done especially for her by the collegiate cheerleaders. The guy holding up the super cute Tiffany yelled to the Peep during the stunt, "Hey Peep... this stunt is for you!!"

Then Slick and I "did calendars" like we try to do every Sunday morning and I realized this is going to be another crazy week!

Time in a bottle

What a beautiful wedding! We were in San Antonio this weekend for my cousin CL's wedding to the beautiful SL. While I will get into the details of the wedding soon, I thought you might like to see the evolution of the Peep over the last couple of months.

Here she is the first time she wore this dress at Miss Mariam's wedding in March.




















And here she is this weekend, the last time she will wear the dress which was precariously short...
